I was first turned on to avocado toast the morning my dad and I stopped at the Urth Caffé in LA’s Arts District. It was served on sprouted ancient grain bread and topped with ripe Haas avocados, a poached egg, Kite Hill almond cheese, micro cilantro, and olive oil. My version of avocado toast is a bit less “LA” than Urth’s but packs major flavor for your taste buds. It’s served on a brown rice cake with a squeeze of lime and a few dashes of seasoning. You can pick up all of the ingredients at Trader Joe’s or even Walmart (they have their own version of the Trader Joe’s Everything but the Bagel Sesame Seasoning). Ingredients:
- 2 brown rice cakes
- 1 ripe avocado
- 1 half lime
- 1 tbsp Trader Joe’s Everything But the Bagel Seasoning Sesame Blend
- 1 egg your way (optional)
- 1 tomato (optional)
Assembly:
- Mash the ripe avo
- Squeeze half a lime in avo mash and mix
- Gently spread mash onto rice cakes
- Sprinkle seasoning on top of the mash
- Add egg and/or tomato to top it off (optional)
- Store your leftover mash in this Guac-Lock to prevent browning and keep your avocado fresh. Enjoy!
